Have you hopped on the pancake cereal bandwagon yet?

If you are obsessed with Tik Tok videos (like me), you might have caught a glimpse of this baby food somewhere. I decided to try my hand at pancake cereals on a whim the other day. It looked like an excellent way to slip in some fun to my morning routine.

Let me confess. I ended up having a bowl of oatmeal on my first attempt. It turns out flipping mini-pancakes needs muscle power and patience. Choosing a Monday morning for this food trend was not a good idea.

However, I am no quitter. I got back into the kitchen that weekend and didn’t come out until I had mastered the art of flipping these miniature morning specials.

So how do you whip perfect pancake cereals?

Instead of trying (and failing) with a new recipe, I opted for my OG pancake mix. I knew the recipe by heart, thanks to my husband’s love for pancake spreads. All I had to do was adjust the measurements to ensure that these mini pancakes became as fluffy as the bigger ones.

I also added blue spirulina powder to amp the nutrition factor and give them this vibrant blue color. After a few attempts, I got the right flipping technique to serve up a cupful of this superfood cereal.

Cooking Tips to Make the Perfect Spirulina Pancake Cereal

Looks can be deceiving when it comes to making this miniature pancakes. You need patience and persistence to get the first batch up. Once you get used to the flipping technique, you won’t want to return to the original size.

That said, I recommend testing them as treats instead of making it for breakfast. That way, you can spend as much time you want to enjoy the tasty results.

Here are a few tricks I learned along the way:

  • Making pancake cereals doesn’t require any special equipment. You only need a mixing bowl, spatula, and non-stick frying pan. Using a non-stick pan ensures that the batter does not stick while you are cooking.
  • Consistency and texture are essential for nailing these pancakes. Your batter should not be runny or thin. Otherwise, it won’t retain its shape when you pipe it out of the bag. In contrast, a thick batter will make the piping process challenging.
  • Use a piping bag to get the right size. If you don’t have a piping bag, you can use a squeeze bottle or cut out a tiny hole in a Ziplock bag to use it as a makeshift piping bag.
  • Pancake batter spreads when it’s exposed to heat. The best idea is to pipe out a smaller size than you need. For instance, my batter was smaller than a 1 AED coin when I piped out the batter.
  • It is easier to eat the tiny pancakes with a spoon. If you are using a fork, I recommend making slightly bigger stackable ones.

How to Flip Spirulina Pancake Cereals?

The perfect pancake flipping style is debatable. These are the three techniques that work. Choose the one you are comfortable with:

  1. Giant Flipper: It allows you to flip all the pancakes in one go. You need to be careful about the grip, though.
  2. Chopsticks: If you are a perfectionist, you would prefer this technique. Use a pair of chopsticks to flip each pancake at a time. The only trouble is that this method takes ages.
  3. Shake and Toss: This one requires mad skills because you need to shake the pan and then toss it, so the pancakes flip. If you manage to do that, your pancakes will cook in half the time. I should warn you, proceed with caution because it’s risky!

Once you decide on the flipping technique, it is time to put some heat on. Select a low heat to warm the pan and then turn it up once you have piped up your pancakes. If you’re afraid of burning the pancakes while piping the batter, you may turn off the heat during that step. Then turn on the stove to cook them once you are done.

Healthy Substitutes: Blue Spirulina Pancake Cereals

Blue Spirulina Powder:

These pancakes get their super cool color from a superfood—spirulina. It is a blue-green alga that is jam-packed with nutrients and antioxidants. It is scentless and tasteless (though some people say it tastes like blueberries!). I used this to boost the nutrition factor.

Plus, it doubles up as a natural food coloring. Test the shade by adding ½ a tsp and then adding more according to your preference.

 Sugar

I have grown accustomed to cutting refined sugar from my system. That means my tolerance for non-sweetened ingredients is higher than most people. I even used ½ the required maple syrup to balance the sweetness.

However, if you have a sweet tooth, opt for cane sugar. It is a healthier alternative to its calorie-laden (and notoriously unsafe) counterpart.

Oil

Use oil instead of butter for the pan. Butter has a low heat point. That is why it’s better to use oil if you don’t want your pancakes to end up burning.

Ingredients

  • 1 ¾ cup almond flour
  • 2 tablespoons tapioca flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup almond milk + 1 tsp apple cider vinegar.
  • 1 tablespoon blue spirulina powder

Instructions

  1. Make homemade buttermilk by mixing almond milk and apple cider vinegar. Set it aside so that the curdled milk has a chance to thicken.
  2. Sift and mix your tapioca flour with almond flour in a small mixing bowl. Then add the baking powder.
  3. Take a separate bowl to beat the eggs. Then add the vanilla extract and buttermilk into the mixture. Whisk well.
  4. Combine the contents of both batters to make your pancake mix. Keep stirring till the mixture reaches a silky-smooth consistency.*
  5. Next, place your pan on the stove and warm them at medium-low heat.
  6. Brush a thin layer of oil (or cooking spray) on your non-stick pan. **
  7. Pour the pancake batter into a squeeze bottle or ziplock bag with a tiny corner cut off. Or you can use a teaspoon to scoop it out.
  8. Squeeze out mini pancake (or drop the batter with a teaspoon). ***
  9. Cook your pancakes until you see tiny bubbles on your pancake’s surface.
  10. Flip your pancakes. If you timed it right, the flipped side should have a golden hue.
  11. Continue cooking for another 30 seconds (or 1 minute). You can also wait for the other sided to turn golden brown before removing them from the pan.
  12. Carefully scoop your mini pancakes out into a bowl.
  13. Pour milk or eat them as they are, depending on your preferences.
  14. Remember to douse them with natural honey or maple syrup for sweetness. It is important for anyone who has a sweet tooth since these cereals are sugar-free.
