Ingredients

COOKIE DOUGH:

  • 115 g plain flour
  • 10 g almond powder
  • 15 g cornstarch
  • 90 g unsalted butter
  • 10 g powdered sugar
  • Pinch of Salt
  • 12 tbsp almond milk
  • ½ tsp vanilla extract
  • ¼ tsp turmeric powder
  • Pinch of matcha powder

PINEAPPLE FILLING:

  • 1 medium pineapple, very ripe
  • 35 g Sugar (Adjust to your preference)
  • 35 g Honey
  • A pinch of Salt

Instructions

COOKIE DOUGH:

  1. Preheat the oven to 340°F (170°C).
  2. Cream the vegan butter and sugar in an electric mixing bowl.
  3. Add salt and vanilla. Stir well.
  4. Sift and mix your flour, almond flour, and cornstarch into the batter.
  5. Add one tablespoon of non-dairy milk to moisten and thicken the dough.
  6. Weigh out 24g of the dough and mix with matcha powder.
  7. Mix the remaining dough with ¼ tsp of turmeric powder.
  8. Cover both dough with plastic wrap and refrigerate for 30 minutes.
  9. Divide the pineapple filling and dough into 9 portions. Roll them both into balls. To wrap, use your palms to roll each dough and then flatten it.
  10. Add a pineapple ball in the middle and fold the edges of the dough up to cover the filling.
  11. Using a pineapple shaped mold, press the matcha dough onto the leaf part of the mold, then place the round dough in and press.
  12. Assemble it in a lined baking tray.
  13. Bake for 15-20 minutes.

PINEAPPLE FILLING:

  1. Peel pineapple and dice into little pieces.
  2. Place a saucepan over medium heat and add pineapple, honey, sugar and salt.
  3. Bring to a boil. Once boiled, reduce heat to medium and let it cook until the liquid is jelly-like.
  4. Remove the saucepan from heat. Set aside to cool.
