Purple Sweet Potato Bounty Bars

Tasty, super chocolaty, and HEALTHY—these homemade candy bars are a dream come true for every coconut-loving chocoholic pursuing a diet plan.

Let’s admit it. We have all been lured towards the sinister aisle of calorie-laden chocolates whenever we do a grocery run. With my recipe, you can satisfy your cravings without feeling guilty.

This easy-breezy, nutritiously-driven requires less than ½ hour for prep. That means you get more time to do the things you love (like binging Netflix, scrolling through your Insta feed for the umpteenth time, or having a home facial).

In a way, all these activities become extra sweeter when you’ve got these delicious bars to munch on the side.

You can even pair them up with my coconut slices to have a tropical-themed party.

These homemade candy bars are a dream come true for every coconut-loving chocoholic pursuing a diet plan.

  • 2 cups unsweetened shredded coconut*
  • 1/3 cup full-fat coconut milk
  • 1/3 cup coconut oil melted
  • 2 tbsp maple syrup optional
  • 2 tbsp purple sweet potato
  • 1 cup sugar-free dark chocolate (70% or more), melted


  1. Prep a loaf pan with parchment paper.
  2. Chuck all the ingredients (except the chocolate) in a large mixing bowl.
  3. Stir until combined.
  4. Pour the mixture into your lined loaf pan. Press it with your hands to form an even layer.
  5. Pop it in the freezer to set. (Approx. 30 mins)
  6. Use a sharp knife to slice the bar into small rectangle pieces (approx. size of your thumb).
  7. Melt your dark chocolate in a water bath.
  8. Line a cookie sheet with parchment paper.
  9. Use a fork to lift the coconut bars and dip them in melted chocolate. Make sure that your coconut bars are completely coated with chocolate.
  10. Place your chocolate-coated bars on the lined cookie sheet.
  11. Pop them in the fridge to set. (Minimum 30 mins)


*You may swap it with coconut flour, but it doesn’t achieve the same texture.

P.S: These healthy bars are highly addictive. Expect the first batch will probably disappear within seconds.  I recommend whipping up a big batch and stock them in a freezer-friendly bag/box for at least a month. If you’re making smaller portions, I recommend storing them in an air-tight container.
