Why you’ll love this recipe
Fajitas usually mean batches in a smoking skillet. Here the oven does the work, so you can warm tortillas and set out toppings while everything roasts on one pan.
- About 30 minutes from cutting board to table.
- One pan to wash — line it with foil and cleanup is close to nothing.
- Build-your-own dinner — everyone picks their own toppings and heat level.
How to get browned, not steamed, fajitas
High heat and space are what matter. At 425°F (220°C) the edges of the peppers and onions caramelize in the time it takes the chicken strips to cook through. Keep everything in a single layer; when pieces overlap, the moisture they release has nowhere to go and they steam. Slicing the chicken into even ½-inch strips also matters, because thick pieces lag behind the vegetables. Check the thickest strip with a thermometer rather than cutting into it — 165°F (74°C) is the target.

-
Step 1: Heat the oven
Set a rack in the upper-middle position and heat the oven to 425°F (220°C). Line a large rimmed sheet pan with foil or parchment for easier cleanup.
-
Step 2: Mix the seasoning
Stir together the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt and pepper in a small bowl.
-
Step 3: Toss everything together
Put the chicken strips, peppers and onion in a large bowl. Drizzle with the olive oil, sprinkle with the seasoning and toss until everything is evenly coated.
-
Step 4: Spread it out
Spread the chicken and vegetables in a single layer on the sheet pan, leaving a little space between pieces. Use two pans if one looks crowded.
Tip: Crowded vegetables steam instead of browning. If the pan is packed edge to edge, split it between two pans and rotate them halfway through.
-
Step 5: Roast
Roast 18–22 minutes, stirring once halfway, until the peppers are tender with browned edges and the thickest chicken strip reads 165°F (74°C) on an instant-read thermometer.
-
Step 6: Finish and serve
Squeeze the lime juice over the pan and toss. Warm the tortillas in the oven for the last 2 minutes or wrapped in a damp paper towel in the microwave for 30 seconds. Fill with the chicken and vegetables, and top with cilantro and your favorite toppings.
Tip: For extra char, switch the oven to broil for the last 2 minutes and watch closely.

Tips for the best results
- Slice the chicken and vegetables to roughly the same thickness so they finish at the same time.
- A dark metal sheet pan browns faster than a light one; start checking at 16 minutes.
- Make the seasoning in a bigger batch and keep it in a jar. It also works on shrimp, steak and roasted potatoes.
Storage, reheating and freezing
- Refrigerator
- Refrigerate the chicken and vegetables within 2 hours in an airtight container for 3–4 days. Store tortillas separately.
- Reheating
- Reheat in a skillet over medium heat or in the microwave until the chicken reaches 165°F (74°C).
- Freezing
- Freeze the cooked filling up to 3 months. The peppers soften after thawing, which is fine for quesadillas or burrito bowls.
Frequently asked questions
What temperature do you bake chicken fajitas at?
Roast at 425°F (220°C) for 18–22 minutes. The high heat browns the peppers before the chicken dries out. The chicken is done at 165°F (74°C).
Can I prep sheet pan fajitas ahead?
Yes. Slice the chicken and vegetables and mix the seasoning up to 1 day ahead, storing the raw chicken separately in the fridge. Toss everything together right before roasting.
Why are my fajita vegetables soggy?
The pan was most likely overcrowded. Spread everything in a single layer with some space between pieces, or use two pans.
