Why you’ll love this recipe

Pot roast is the original hands-off Sunday dinner. A short sear in the morning builds flavor, then the slow cooker turns an inexpensive chuck roast into something you can cut with a spoon.

  • About 25 minutes of hands-on work — the rest is waiting.
  • Meat, vegetables and gravy all from one cooker.
  • Great leftovers for sandwiches, tacos or hash.

Why chuck roast needs a long cook

Chuck comes from the shoulder, a hard-working muscle full of collagen. Cooked quickly, it is chewy. Held for hours at a gentle braise, that collagen melts into gelatin, which makes the meat feel moist and gives the gravy body.

That is also why the thermometer reading matters differently here than for a steak. The USDA safe minimum for whole beef cuts is 145°F (63°C) with a 3-minute rest, and a slow-cooked roast passes that early. Tenderness comes later, typically when the center is around 195–205°F (90–96°C). The simplest check is a fork: when it twists easily through the thickest part, it is ready.

Instructions

Tap a step number to mark it done.

  1. Step 1: Season and sear

Pat the roast dry and season all over with the salt and pepper. Heat the oil in a large skillet over medium-high heat and sear the roast 4–5 minutes per side until deeply browned.

Tip: Use a fully thawed roast. USDA advises against putting frozen meat in a slow cooker because it can sit too long at unsafe temperatures.

  2. Step 2: Layer the vegetables

Arrange the potatoes, carrots, onion and garlic in the bottom of a 6-quart slow cooker and set the seared roast on top.

  3. Step 3: Add the braising liquid

Lower the skillet heat to medium, add the broth and whisk in the tomato paste and Worcestershire, scraping up the browned bits. Pour it over the roast and tuck in the thyme, rosemary and bay leaf.

  4. Step 4: Slow cook

Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the beef shreds easily with a fork. Avoid lifting the lid during cooking.

Tip: Chuck is safe once it passes 145°F (63°C), but it only turns tender when the connective tissue breaks down, usually around 200°F (93°C). If it is still tough, it needs more time, not less.

  5. Step 5: Make the gravy

Move the roast and vegetables to a platter and tent with foil. Strain the cooking liquid into a saucepan, skim off the fat and bring to a simmer. Stir the cornstarch into the cold water, whisk it in and simmer 1–2 minutes until thickened. Season with salt and pepper.

  6. Step 6: Serve

Slice or pull the roast into large pieces, discard the herb stems and bay leaf, and serve with the vegetables and gravy.

Tips for the best results

  • Chuck roast is the best cut here. Leaner cuts like round or sirloin tip dry out during a long braise.
  • Searing is optional for safety but adds a lot of flavor. If you skip it, add an extra tablespoon of tomato paste.
  • Cut the potatoes and carrots into large pieces so they hold their shape over a long cook.

Storage, reheating and freezing

Refrigerator
Store the beef and vegetables in their gravy in an airtight container for 3–4 days. Refrigerate within 2 hours of cooking.
Reheating
Reheat covered in a saucepan over medium-low heat or in the microwave until it reaches 165°F (74°C). The gravy keeps the beef from drying out.
Freezing
Freeze the beef in its gravy for up to 3 months. Potatoes turn grainy after freezing, so freeze them only if you do not mind the softer texture.

Frequently asked questions

Should pot roast cook on LOW or HIGH?

LOW gives the most tender result because the connective tissue has longer to break down. HIGH works when you are short on time, but the meat can be slightly stringier.

Why is my pot roast tough?

It is usually undercooked. Chuck gets firmer before it turns tender. Cover it and keep cooking for another hour, then check again with a fork.

Do I need to cover the roast with liquid?

No. One cup of broth is enough because the roast and vegetables release their own juices. Too much liquid dilutes the flavor and gives you a boiled texture.
